Colombian-French, Andrés is the creator of Casa Carolina’s culinary vision. With a background that includes his work at Cascajal in Bogotá, his connection with Caroline and our establishment goes beyond the professional: it’s an emotional bond. His menu champions mindful and healthy gastronomy, where each local ingredient becomes a voice and a memory.
Santiago Suárez
Alongside Andrés, Santiago Suárez complements our vision with his technique, balance, and focus on seasonal ingredients. Their sensibility aligns with Casa Carolina’s open kitchen philosophy, where respect for the biodiversity of the Colombian Caribbean and creativity coexist in perfect harmony.
